Gluten Free Pork Chops & Veggies

This dish is a simple and delicious way to bake pork. It reminds me of a crockpot meal, it’s full of flavor and definitely a homey comfort food.

What You Need:

  • 4 pork rib chops
  • 2 teaspoons parsley
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon coarse ground pepper
  • 1 tablespoon minced onions
  • 6 new potatoes, cut into fourths (3 cups)
  • 1 1/2 cups of  mushrooms, cut in half
  • 1 medium red bell pepper
  • 1 medium tomato
  • Cooking spray

1. Preheat Oven To 375
2. Cover pan with cooking spray
3. Mix parsley, rosemary, garlic salt & pepper in small bowl

4. Spray pork chops lightly with cooking spray on both sides
5. Sprinkle with about 1 tsp of the herb mixture on both sides and place into corners of pan

6. Chop potatoes & mushrooms
7. Place them into a bowl along with minced onions and spray a couple of times with cooking spray
8. Pour in the rest of the herb mixture and mix together well

10. Bake for 40 minutes
11. While baking chop tomatoes

12. After 45 minutes, turn pork chops over, mix vegetables
13. Pour tomatoes over top of vegetables
14. Return to oven to bake for 10 minutes

(Cooking times may vary, so check on meat and veggies every 10 minutes or so. If meat looks done before veggies remove from pan and continue to cook vegetables)
