Dreamy Gluten Free Mac & Cheese

What You Need:

  • 1/2 cup butter or 1/2 cup margarine
  • 1/2 cup Gluten Free all-purpose flour. I use Red Mill
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 8-ounce packages sharp cheddar cheese, shredded and divided
  • 1 8 ounce package extra-sharp cheddar cheese, shredded
  • 1 16-ounce package of Gluten Free pasta, cooked. I use Ronzoni
  • 4 ounces Velveeta, cubed in small cubes
  • 1 medium tomato
  • 1/2 cup of spinach
  • Whisk
  • Skillet
  • 9X13 Pan

1. Preheat oven to 350 degrees. Cook pasta according to package instructions. I used Ronzoni, my favorite Gluten Free pasta option which doesn’t come in 16 ounce packages, so you need to get two 12 ounce packages and measure it out.

2. Before starting I suggest getting everything ready. Open up all cheese packets. Shred cheese if you didn’t buy it pre shredded. Slice Velveeta into cubes. Measure out Salt, Pepper, Cayenne Pepper & Garlic Powder and place into small dish together. Cut up tomatoes & rip up spinach into smaller pieces.

3. Melt butter in large skillet over medium-high heat

4. Slowly add in flour and whisk until smooth

5. Continue to whisk for approx 2 minutes

6. Add in the salt, pepper, cayenne pepper & garlic powder

7. Gradually whisk in milk and then cream

8. Continue to whisk for 8-10 minutes, until mixture is thick

9. Add in 1/2 of the sharp cheddar cheese, whisk until smooth

10. Add in all of the extra sharp cheddar cheese, whisk until smooth

11. Add in the Velveeta, whisk until smooth

12. Pour 1/2 of noodles into bottom of pan

13. Pour 1/2 of cheese over top and stir together until evenly distributed

14. Repeat steps 12 and 13 with remainder of noodles and cheese

15. Add in tomato and spinach and stir

16. Bake in oven at 350 for 20 minutes

*This recipe is gluten free & vegetarian. If you’d like to make it a little more hearty and casserole like, add cooked chicken breast pieces before placing in oven.
