Pesto Shrimp



What You Need:

1/2 Cup of Fresh Basil
1 Small Clove of Garlic
1 TBSP of Lemon Juice
1 TBSP of Pine Nuts (Toasted)
2 TBSP Grated Parmesan
2 TBSP Olive Oil
Salt & Pepper To Taste
1 LB Shrimp, Peeled & Deviened


 **Before starting, if your Pine Nuts aren’t toasted, make sure to toast them. Preheat oven to 350, place pine nuts on ungreased baking pan and bake for 15 minutes


1. To make Pesto: combine basil, garlic, lemon juice, toasted pine nuts, olive oil, parmesan cheese and salt & pepper in blender/food processor/bowl for hand blender (I used a regular blender)

2.Blend until mixture is smooth (takes a few minutes)


3. Marinate shrimp in the pesto sauce for 20 min

4. Skewer the shrimp

5. Grill over medium-high heat for 2-3 minutes per side
