Gluten Free Ice Cream Cookie Sandwich

You can’t find these yummy Gluten Free treats in the stores, but making them at home yourself is easy as pie! Follow these simple instructions and you’ll be on your way to ice cream cookie heaven

What You Need:

Pillsbury Gluten Free Chocolate Chip Cookie Dough
Ice Cream (any flavor you desire)

1. Preheat oven to 350

2. Scoop cookie dough in ball form onto cookie sheet. Make them slightly larger than you would normal cookies. Using the entire 14.3 ounce container, you should make 6-8 cookies

3. Bake for 11-13 minutes & let cool for approx 10 minutes

4. Turn cookie upside down so flat side is up, scoop a decent amount of ice cream onto cookie, trying to make it even as possible. Place other cookie, flat side down, on top and lightly press down with spatula. Be sure to be very gentle as to not break the cookies.

Try all different flavors! These 3 from the Kroger Deluxe line were delicious. My favorite was the Artisan Vanilla Bean

Enjoy right away or wrap in foil and place in freezer to enjoy later! I would personally eat within 1-2 days of making them 🙂
