KIND Gluten-Free DarkChocolateBananaPeanutButta Muffins

I love KIND snacks new granolas so I wanted to see what I could whip up that’s outside of the box, or bag for this matter. This might seriously be the most delicious and simple things I’ve ever created in the kitchen. Not to mention I wasn’t inspired by anything other than the items in my cupboard, so I’m a very proud chef.

If you’re a fan of dark chocolate, banana & peanut butter prepare for some sweet tooth dreams. If one of these 3 ingredients doesn’t sound appealing to you, take it out. Or even just using one of them would be yummy, but to me the trifecta is what makes it so good.

What You Need:

16 oz box of King Arthur Flour gluten free muffin mix

-6 TBSP butter and/or oil

-3 large eggs

-1 cup milk (can substitute rice milk)

2 bananas

1 cup of Nestle dark chocolate morsels (use milk if your not a dark fan)

3/4 cup of KIND peanut butter granola

Betty Crocker dark chocolate frosting (optional)

Just follow the instructions on the King Arthur Flour muffin mix box

(you can opt to use a different kind of flour, but I can’t guarantee they will turn out as yummy)

Bring on the mix ins

Mash up bananas. I squished them around a bit before un-peeling and then mashed them up some more with a spoon

Stir into mixture

Mix in chocolate morsels & KIND granola (leave a little granola to sprinkle on top later)

Add in 3 dollops of icing and stir in (gives some extra chocolatey flavor & moisture)

Scoop muffin mixture into pan **Use foil baking cups or spray the pan with nonstick

Leave a little room at the top so they don’t overflow into each other.

Then sprinkle tops with small amount of KIND granola

Bake for 18-22 minutes (Be sure to check at 18)

Enjoy warm or room temperature!
