Gluten Free Flour-less Banana Pancakes & Blueberry Sauce


These flour-less banana pancakes with blueberry sauce are AH-MAZING. Fast, super easy to make, cheap..etc etc. The banana pancakes alone are awesome, and can be eaten so many ways, however the homemade blueberry sauce makes them that much better. If you’re going to make this entire meal I suggest starting off by making the sauce..

Blueberry Sauce


What You Need

  • 2 cups blueberries
  • 1 tbsp cornstarch
  • 1/2 cup sugar
  • water


  1.  Combine 2 tbsp of water & the cornstarch in a small dish and set to the side
  2. In medium saucepan, bring 1 cup water, sugar & blueberries to a boil, stirring occasionally. Once boiling, reduce heat and let simmer for 1o minutes, continuing to stir occasionally
  3. Stir in water and cornstarch mixture, this will thicken up the blueberry sauce. Keep warm on stove if you’re going to eat immediately or place in container and store in refrigerator for up to 30 days

Banana Pancakes


What You Need

  • 1 1/2 large ripe bananas
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp baking powder


  1. Crack eggs in small bowl and whisk them
  2. Peel bananas and break into small chunks with hands, place them into a large bowl. Lightly mash with spatula or masher
  3. Add the eggs to the banana bowl. Then add baking powder, vanilla & cinnamon and mix together
  4. Pour onto skillet approx 2 tbsp at a time- at medium-low heat, like you would normal pancakes. Flip after slightly brown

**This recipe only makes about 4 small pancakes, so just multiply the ingredients by how many pancakes you want to make


Pour warm blueberry sauce over pancakes & enjoy!
